In Greece, only freshly caught seafood is used. Our waters are abundant, so it is quite easy to find fresh fish and other seafood on a regular basis. There is also a lot of octopus in the seas. When they are caught, we prepare them in a certain way to make them even more tender. However, it all starts with a freshly caught or hunted octopus.
